A versatile knife of just the right size for everyday cooking, with an exhilarating sharpness.

The beautiful blade extends straight from the base to the tip, and the entire knife, including the handle, is made of stainless steel, giving it a clean and stylish look. I had been searching for a long time for a knife that felt just right in terms of appearance, performance, and ease of use, and this Gyuto (chef's knife) from Yoshita Industrial Design Office is one I can confidently recommend.
A Gyuto is a Western-style all-purpose knife, also known as a chef's knife. Although the name "Gyuto" (meaning "beef knife") might suggest it's best for cutting meat, it's actually a highly versatile knife that can also be used for fish and vegetables. Compared to the Japanese Santoku knife, it has a sharper tip, so at kikkake, we've prepared a 18cm blade length (total length approx. 29cm) that's easy to handle in a home kitchen.
When cutting vegetables, push the knife forward, and when cutting meat or fish, insert the blade from the base and smoothly pull it towards you for a satisfying cut. Made in the traditional production region of Seki City, Gifu Prefecture, it boasts a remarkably smooth cutting edge without catching, so we encourage you to try it with various ingredients and cutting styles.

The most distinctive feature is the handle.
More flexible to grip than it looks, it's thick yet light and exceptionally easy to use.

While the sharpness of the knife is certainly excellent, what's even more distinctive is the handle, seamlessly crafted from the blade.
It has a shape like a flat stainless steel bar folded over, and at first glance, it exudes the sharp aesthetic typical of metal. However, when you actually hold and use it, the grip feels surprisingly natural. The edges of the stainless steel bar are carefully rounded, so it fits comfortably in your hand, and the thickness created by folding it ensures a secure fit for your finger joints, providing stability. Despite its thickness, the center is hollow, so it's not heavy. This clever design makes it a knife whose comfort I appreciate every time I use it.

The blade has a three-layer structure, with rust-resistant stainless steel on both sides and a high-carbon molybdenum vanadium steel (steel) core that is highly hard and long-lasting. This makes it resistant to rust and allows it to maintain its sharpness well. Furthermore, the undulating metallic boundary line on the blade, created by this structure, is strikingly cool and a functional beauty that captures the eye. It comes in a sleek, handsome box, making it an excellent gift option.
